Healthy Pumpkin Banana Nut Muffins



What a great way to start the week and what’s better than to get exciting news on a Monday nonetheless! This absolutely made my day. I couldn’t stop smiling when I got the email from Shelley from Yummly saying that my Healthy Banana Nut Muffins has been picked to be featured on their blog!

So what does all this mean you maybe be asking yourself. This means that my blog is now Yummly Certified, it an honor for food bloggers, a recognition their blog is somethin' to talk about. tee hee. It's the little things that makes this girl happy. Over the weekend I had been working on the behind scenes of my blog. Check out my cute little favicon I made.

With one week down of school, it's hard to believe that summer is coming to an end, Labor day is this weekend, and autumn is right around the corner. With that in mind, try these lightly sweet muffins that are made with bananas, pumpkin, and applesauce, perfect for picky eaters and kids of all ages. This recipe makes a whopping 30 muffins and can easily be frozen for a quick breakfast or after school snack.

Healthy Pumpkin Banana Nut Muffins

Great-tasting healthy muffins with pumpkin, applesauce, and banana. Freeze well for a quick breakfast or snack!
Cook time| 25 Min Prep time| 15 Min Serves| 30

Ingredients
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

1 1/2 all purpose flour
2 c whole wheat flour
2/3 c rolled oats
1/2 c oat bran
4 tsp baking powder
2 tsp baking soda
1/2 tsp salt
4 tsp cinnamon
2 tsp ground ginger
1 tsp nutmeg
1 tsp pumpkin pie spices
3 large banana, ripe mashed
1 c applesauce
15 oz canned pumpkin
4 large eggs, lightly beaten
1 c granulated sugar
1 c brown sugar
1 c walnuts, toasted chopped

Directions

1. Preheat oven to 350 degrees F. Grease or line muffin tins with paper liners

2. Combine flours, bran, oats, baking powder, spices, baking soda and salt in a medium bowl. Using whisk or spoon, stir until well mixed.

3. Combine remaining ingredients (except nuts) in a large mixing bowl; beat until smooth.

4. Gradually beat in flour mixture. Beat just until combined.

5. Spoon into prepared pans or tins (fill cups until just about full). Bake for 25 to 30 minutes, until toothpick inserted in the middle of the muffin comes out clean.

6. Remove muffins from pan and cool on wire rack as soon as they come out of the oven.
